Orange Ginger Cookie Sandwiches with Orange Cream Cheese filling

I found these cookies on RecipeGirl.com and decided to make them for Christmas goodies this year. They are sooooo yummy! My kids were so mad that we didn't keep more for ourselves! If you don't want to make them into sandwiches, you can just spread the frosting over the top and enjoy one at a time!!!

COOKIES:
2 cups all-purpose flour
½ tsp baking soda
1½ tsp ground cinnamon
2 tsp ground ginger
¼ tsp ground cloves
¼ tsp salt
12 Tbs (1½ sticks) unsalted butter, at room temperature
½ cup firmly packed dark brown sugar
1 cup granulated sugar
¼ cup molasses
1 large egg
½ tsp vanilla extract

FILLING:
¼ cup (4 oz.) cream cheese, at room temperature
2 Tbs unsalted butter at room temperature
½ tsp vanilla extract
1 tsp grated orange zest
1 tsp orange juice
½ tsp ground ginger
1¾ cups powdered sugar, plus more as needed

To make cookies: In a medium bowl, combine flour, baking soda, cinnamon, ginger, cloves and salt. Set aside. In the bowl of an electric mixer, cream butter, brown sugar, and ½ cup granulated sugar until fluffy, about 2 minutes. Add molasses, egg and vanilla, and beat at medium- high until incorporated, about 30 seconds. Reduce speed to low; add flour mixture and mix until well combined. Cover and chill at least 30 minutes or up to 1 day.

Ready to bake: Preheat oven to 350°F. Place remaining ½ cup granulated sugar in a shallow bowl. Shape dough into 1-inch balls; roll in sugar to coat. Arrange about 2 inches apart on 2 ungreased baking sheets. Using the bottom of a glass that has been lightly greased, then dipped in sugar, flatten dough into ¼-inch-thick disks. Bake 13 to 15 minutes, or until firm. Remove from oven and immediately transfer cookies to a cooling rack.

Make filling: In a medium bowl, combine all ingredients; mix until smooth, adding more powdered sugar as needed (filling should have consistency of very thick frosting). With a small spatula, frost bottoms of half the cookies (about 1 tsp. filling each); top with remaining cookies (so bottom sides are together) to make sandwich cookies.

Yield: 2 dozen sandwich cookies

Probably my new favorite cookie!!!

Christmas Balls of Chocolate Goodness

This is like my most favorite candy that my mom used to make for Christmas - they are involved but so so so yummy!!!

1 can eagle brand milk
1 box+ 1 c. powdered sugar ( i believe that a box consists of 3 1/2 c.)
2 squares butter, softened
1 t. vanilla

cream above ingredients until smooth and then divide into 4 sections. Freeze. After frozen scoop out balls with a melon baller (or other such tool) and refreeze on a cookie sheet covered with wax paper. Dip frozen balls into melted dipping chocolate and then roll in chopped nuts. Try not to eat them all yourself. You should share. (at least a few...)

Christmas Caramels

mmmmm, it took about 3 tries but I finally got this down - candy thermometer is a necessity! ( i know Christmas is over, but I'm trying to get all my recipes in so just deal with it!!! there will probably be random holiday things thrown in here and there... :)

2 c. sugar
1/4 c. butter
3/4 c. light corn syrup
2 c. heavy whip cream
1/8 t. salt
1 t. vanilla
1/2-3/4 c. chopped nuts ( i used walnuts)

Combine sugar, syrup, salt, butter, and 1 cup of cream in a large saucepan (important to use a large one because when this boils it expands and it is really hot!) Stir constantly until mixture comes to a full boil - then gradually add rest of cream making sure mixture doesn't stop boiling. cook to "hard ball stage" or 250 degrees on candy thermometer. ***(if you would like them to be chewier only cook until 234 degrees - play with it and see what you like!) Remove from heat and stir in nuts and vanilla. Pour into buttered 8 inch square pan. Let cool and enjoy! ( you can share with your neighbors if you're in the Christmas mood.... :)

Christmas Pretzels

This is what I made for my neighbor's and friends for Christmas treats this year! It was SO easy and my kids LOVED being able to help!

1 bag square pretzels (we used the butter pretzels)
1 0r 2 bags of Hershey peppermint kisses or Hershey hugs candies ( we made some of each for some variety...)
1 bag christmas colored M&M's

Place pretzels on a cookie sheet, top each pretzel with either a peppermint kiss or a hug (center them as best as you can!). place in 350 degree oven for 1-2 minutes (the hugs melt faster due to the white chocolate...). You just want them to soften not completely melt. Pull out of the oven and immediatly top with one M&M, pushing down softly. Very pretty looking and tasty!!!

THE SEARCH IS ON!!!!!
